Ocean Prime Seafoods is proud to offer Faroe Island Sea SCALLOPS, from the pristine waters of the Faroe Islands, off the coast of Iceland.  These scallops are harvested from the wild in the cold, clean North Atlantic waters, by a Certified Sustainable Seafood fishery. This recipe is provided by the fishery, so it is well tested.  Its great because prep time is less than 10 minutes.  Serve this with crusty French bread and your favorite wine.

Faroe Islands Scallop Saute

1 T canola oil
2 T butter
1 lb. Scallops, thawed, patted dry
2 garlic cloves, slivered
1 T lemon juice
3 T white wine (the kind you sip while cooking 🙂 )
1/4 tsp salt and ground black pepper
chopped fresh parsley

Heat oil and 1/2 the butter in a large heavy skillet over medium/high heat until mixture starts to brown.(Hint:  Dry the scallops and get the pan and oil hot so the scallops brown.)

Add 1/2 the scallops and cook without moving until seared, about 30 seconds. Flip and sear other side, about 30 seconds.  Remove from pan, and add remaining scallops and butter to pan and cook like the first 1/2 of scallops. Return first batch to pan and remove pan from heat.

Add garlic, lemon juice and wine.  Season with salt and pepper and sprinkle with parsley, if desired.

Serve immediately with crusty French bread for dipping in the sauce.
